What research says

Study type not stated

  • Open question

    Keeping juice fresh3

In mulberry juice, dimethyl dicarbonate with high pressure homogenization stopped microbes growing during cold storage, but lowered some antioxidants.

  • Open question

    Juice quality after treatment4

Dimethyl dicarbonate kept fermented litchi juice tasting better and retaining more nutrients than heat treatment.

How it’s made and used

  • Wine yeast control5

In red wine, dimethyl dicarbonate killed several yeast species at low levels, but not lactic or acetic acid bacteria.

The signal at the top counts the findings in people and in animal and lab studies. A concern in studies of people outranks animal and lab studies, and “No concerns” needs at least two findings in people. Findings whose study type is not stated are shown but not counted.
